How to talk to restaurants about gluten-free and dairy-free safety
A “gluten-free” menu label does not tell you how the food is prepared. The ingredients may be gluten-free while shared fryers, grills, utensils, or preparation surfaces still create a cross-contact risk. The right conversation can help you make a safer choice.
THE REAL CHALLENGE
You are not being difficult by asking questions. You are giving the restaurant the information it needs to serve you safely.
Explain your needs before ordering. Try saying: “I have celiac disease, so I need my meal to be completely gluten-free and protected from cross-contact.”
START WITH A CLEAR STATEMENT
Do not stop at asking whether an item is gluten-free or dairy-free. Ask: 1. Where will it be prepared? 2. Will clean utensils and cookware be used? 3. Does it touch shared surfaces? 4. Can the kitchen safely accommodate my needs?
Shared equipment can turn safe ingredients into an unsafe meal. Ask about: • Fryers • Grills and griddles • Toasters • Pasta water • Cutting boards • Utensils • Gloves and preparation surfaces
CHECK SHARED EQUIPMENT
Sauces, marinades, seasoning blends, dressings, butter, garnishes, and fryer oil can introduce gluten or milk. Ask the server to verify ingredients with the kitchen rather than relying on memory.
A confident answer should include clear preparation details—not only “We do this all the time.” Pause if the staff: • Seems unsure • Dismisses your concerns • Cannot explain the preparation process • Gives you conflicting answers Uncertainty is information.
LISTEN TO THE ANSWER
If the restaurant cannot confidently explain how your meal will be prepared, you do not have to take the risk. Thank the staff, choose a packaged option you trust, or eat somewhere else. Leaving is not an overreaction. It is informed self-protection.
